Apart from greens, there are other vegetables that can be used in salads. Commonly used raw vegetables for salad include spring onions, celery, tomatoes, carrots, green onions, red onions, cucumbers, peppers, and radishes. There are other ingredients that can be added to this salads and they include; olives, croutons, avocado, green beans, mushrooms, artichoke hearts, hardboiled eggs, cheeses, heart of palm, roasted red bell peppers, meat (for example bacon and chicken), or seafood (like shrimp and tuna), are occasionally added to salads.
Grilled vegetable salad served with creamy blue cheese dressing

Ingredients
· The dressing comprises of;
· 1/3 cup of mayonnaise in low fat
· 1/3 cup of un flavored low fat yogurt
· 1/4 cup (one ounce) crumbled blue cheese
· 1/4 cup one percent low fat milk
· 1/4 teaspoon fresh black pepper powder
· 1/8 teaspoon of salt
· The salad comprises of
· 1/4 pound of trimmed green beans
· 1/4 pound of trimmed sugar snap peas
· 1/4 pound carrots, without peels and sliced diagonally into half an inch thick slices
· 1 cup (half an inch thick) slices of red onion
· Cooking spray
· 1/2 teaspoon of fresh black pepper powder
· 1/4 teaspoon of garlic salt
· 6 cups cut romaine lettuce
· 1/2 cup thinly chopped radishes

Preparation
To prepare the dressing, mix the mayonnaise, yogurt, crumbled blue cheese, milk, grounded pepper, and salt and whisk it until it is well blended. Cover it and let it chill
Get the grill ready to medium heat.

To prepare the salad, cook the carrots, beans, and peas in boiling water for three minutes or until it is crisp tender. Draw off the water and dip it into ice cold water. Let it drain. Put the mixture in a large bowl, and then add onion chops. Use the cooking spray to lightly coat the mixture. Sprinkle with a half teaspoon of garlic salt and pepper and toss it gently to coat
Coat a wire grilling basket with the cooking spray and put the vegetable mixture in it. Place the grilling basket on a grill rack, and grill it for seven minutes on both sides or until it is light brown in color. Place one and a half cups of lettuce on each of the four salad plates. Divide out the radishes and grilled vegetables evenly among the servings. Serve a 1/4 cup of the dressing with each salad.
